At Söntés, you know we don’t sit on our laurels. Nothing is ever set on autopilot. We’re movers and shakers, go-getters, change-makers. We prefer to strive.
And that’s why, with the season change, comes our next great wine changeover. You know we offer 40 wines by the glass, but what you may not know is that our proprietor and sommelier, Tessa, spends two months before each changeover seeking out top-notch and exclusive wines, negotiating prices, and getting them delivered to our door.
Of the 40 wines by the glass we offered last week, this week 24 have been traded out. And Tessa has educated the staff through her own research, wine tech sheets, and has organized tastings and generated food-pairing discussions. (Another meeting to drink wine?? It’s a tough job, but somebody’s got to do it!) We’re ready to share what we’ve learned and recommend a great wine to you.
Here are some behind-the-scenes highlights from the staff wine classes:
- Our Bar Manager Darrell recommends the Foris Pinot Gris with the shrimp and pork egg rolls
- Our server, Angel, recommends Cercius Blanc for sipping, especially in warm weather
- Our Catering Manager Paul recommends the Evansham Wood Pinot Noir of Willamette Valley for just about everything on the menu
…And some outtakes:
- “This wine smells like bologna…”
- “As if they bottled the smell of fresh-cut field flowers and piled them up”
- “The nose is pinot noir, but the taste is all cab”
- “Raw meat and blueberries—Can I have more of this one?”
- “Smells a little like frosting”
Stop in for some new wines and be sure to check out Darrell’s newly featured cocktails, the Aperol Spritz, Thorn & Petal, and our own Söntés Grasshopper made with top shelf liqueurs. At Söntés, it’s a whole different ballgame this week!
